Colombia Las Flores Sidra Bourbon

Finca Las Flores is operated by third generation growers, brothers Carlos, Jhoan and Diego Vergara. With over 30 years of experience, the Vergara family are dedicated to producing superior quality coffee using innovative production techniques. Ripe cherries are harvested and undergo 48 hours of fermentation in plastic barrels, followed by thermal shock processing where the coffee is washed at 50°C. After a second anaerobic fermentation phase, a yeast formula is sprayed onto the cherries and left for a further 80 hours. Once fermentation is complete, cherries are sundried for 15 days and rigorously quality checked. The result is a coffee with an exceptional profile of burnt orange, star fruit, dark chocolate and cardamom.
