Recommended for all brew methods.
As the lightest and brightest blend on our menu, Fruitopia is designed to be anything but traditional. With our friends at Cofinet we keep it moving, rotating the components with the freshest harvests. Every version includes a co-ferment, where the cherries are fermented alongside actual fruit to pull out a depth you cannot get any other way. This time it is Jairo Arcila's blackberry co-ferment from Colombia at 20%, with our washed Kenya Adumu at 80%. The Kenya brings structure, juicy acidity and a vanilla finish, and the co-ferment layers dark blackberry over the top.
Co-fermentation is still argued over in specialty coffee, reasonably so, because done badly it buries the coffee under whatever fruit was thrown at it. Jairo Arcila works the other way round and treats the fruit as seasoning rather than the dish. The Kenyan half is why it holds together. Adumu is a washed lot from smallholders around Mount Kenya, and washed Kenyan coffee has the acidity and the backbone to carry something as loud as blackberry without being flattened by it.
