Sourced from the Matari Mountains (AKA Bani Matar), Yemen:

Light Roast / Matari Region: Hints of chocolate, hints of fruit. Slightly winey.

Medium Roast / Matari Region: Chocolate. Smooth. Balanced. (The rest is details: toasty, rich,  and earnest.)

Dark Roast / Matari Region: Rich, chocolatey, bold, and balanced. A real treat. If you taste carefully, you can discover winey underneath. This hidden flavor gives depth, structure, and balance—and warmth.

Origin Notes:

• Matari is one of Yemen's most famous regions, and it is know for its high altitude and intense flavor.
  
• Matari is nestled between Yemen's capital of Sana'a and the Haima region.
• Typically, flavor is traditional and neutral: it is neither winey/fermented, nor citrusy. The 2026 offering breaks the rule, and has a very slight winey flavor.
