Expect notes of Blackberry Jam, Caramel, Hazelnut
Our fourth Low Caf, and the first built as a blend. Half is La Montaña, a washed field blend from Cooperativa La Prosperidad de Chirinos in Cajamarca, northern Peru, and the same lot that gives our George Street Blend its sweetness. The other half is El Indio, grown by around 175 smallholder families in Planadas, Tolima, Colombia. It is given an extended natural ferment, then decaffeinated using sugarcane. An equal split puts the caffeine at roughly half that of a regular cup. Blackberry jam from El Indio, with caramel and a hazelnut finish from La Montaña.
The decaf half is where this blend gets interesting. El Indio goes through Cofinet's EF2 programme: cherries rest 24 hours in open air, then 50 hours sealed in cool tanks, before drying inside the whole cherry. That long, slow ferment builds a deep, jammy sweetness. The green beans are then decaffeinated with ethyl acetate made from fermented sugarcane, a gentle process that keeps the fruit front and centre. On its own, El Indio is all blackberry and treacle. La Montaña's washed sweetness rounds it out, softening the jam and carrying it through to a long, nutty finish.
