This Peruvian coffee makes it as our 5th coffee by Nordic Approach, with a cupping score of 86.

The Ayacucho Collective is formed by sixteen families nestled in the mountains of Ancco. Spanning 24 hectares between 1,700 and 2,000 meters above sea level, these farmers work by upholding traditional Andean farming practices.

The farms thrive in fertile volcanic soils and benefit from native shade trees that protect the coffee and enrich the soil with organic matter. Using machetes for fieldwork helps preserve the soil’s structure and maintain its natural balance. Harvest takes place from May to September.

From the farms, there are breathtaking views of the Apurímac River valley, where diverse birdlife and lush vegetation reflect the region’s natural richness.

About the producer:

The Incahuasi Cooperative operates between 1,800 and 2,400 meters above sea level, beneath the Choqesafra snow-capped mountain in Inkawasi, La Convención province, Cusco region.

Communal processing stations are central to Incahuasi’s success, as they provide essential infrastructure for farmers who might otherwise lack the means to process their own coffee.

Coffee cultivation in the cooperative reflects ancestral Andean practices such as ayni and minca, values of reciprocity and collective work inherited from the Incas. Farms rely on shade-grown systems, irrigation, and soil conservation practices, producing high-quality Arabica with a balance of body, sweetness, acidity, and aroma.
