This coffee produced by the Mayan and Ixil Indian communities of the Altiplano region, who live at an altitude of 2000 m in dwellings dating from the time of the Conquistadors, is grown without any chemical fertilizers or pesticides.
Coffee plantations are mainly under shade, according to relatively efficient technical systems. Despite their very small size, the coffee trees are regularly renewed. Yields are therefore generally very high. Most producers manage the post-harvest processing of the coffee themselves (pulping, fermentation, drying of the parchment coffee).
