Both the Caldas region of Colombia and the fermentation of coffee in rum barrels have been recognized by UNESCO as “Cultural Heritage” since 2011.

This coffee is grown at an altitude of 1,350 to 1,470 m at Finca San Jose, in an area with volcanic soil and an average year-round temperature of 21°C to 25°C.

The family business Finca San José was established in 1963 and is now carried on by the third generation. Their shared goal has been to conserve natural resources, maintain local traditions, and develop the local community.

The coffee cherries are harvested by hand. Cherries suitable for this process must be purple in color and very ripe; they are therefore selected during the second and third harvests of the year.

The coffee beans used are of the Castillo variety, and only Supremo-sized beans are selected. After an initial processing stage, they are left to ferment for approximately three months in oak barrels that held rum for at least eight years. A sample is taken every 30 days for analysis. The entire process is certified in accordance with the standards of the Federacion Nacional de Cafeteros (FNC).

The result is incredible! A sweet coffee with very intense aromatic notes of rum that carry through into the aftertaste.
