A Guatemala that tastes like ripe fruit

Canac comes from the Lake Atitlán area in southwestern Guatemala, among volcanoes and mineral-rich soils. Here, coffee grows between 1,480 and 1,800 meters: cool nights let the cherries ripen slowly, giving their sweetness plenty of time to develop.

Bourbon, Catuaí, and Caturra, hand-picked one by one. The process does the rest.

Sleeping Bag natural process: fruit inside the bean

In the natural process, the cherry dries whole, with the bean still inside. With the Sleeping Bag technique, the cherries rest in the sun inside breathable bags: drying is slower and more even, the fruit stays clean, and it doesn't tip into “over-fermented.”

In practice: all the fruity character of natural processing, without losing precision.

In the cup

It opens with yellow peach, followed by blueberry and raspberry. Grapefruit adds a burst of freshness, brown sugar keeps everything sweet, and the finish brings cocoa and walnut. Medium body, lively but gentle acidity.

How to brew it

It shines as a pour-over (V60, Chemex, Aeropress): the fruit comes through note by note. As espresso, it becomes more chocolatey, with peach lingering in the background. If you like fruity but clean coffees, this one's for you.
