Origin

From Finca El Vergel, located in the renowned Colombian region of Tolima, comes a cutting-edge coffee bearing the visionary signature of the Bayter brothers. The farm, situated in the fertile area of Fresno at an altitude of 1,450 meters, benefits from an ideal microclimate that promotes the optimal development of coffee cherries.

Variety

Bourbon Sidra is a variety of Coffea Arabica selected in Ecuador and now also grown in specialty coffee regions of Colombia. Its genetic origins are still debated: it is often described as a cross between Bourbon and Typica, but some analyses place it closer to Ethiopian varieties. It is prized for its sweetness, bright acidity, and intense fruity and floral profiles with notes of strawberry, citrus, pineapple, and bubblegum. It combines cup quality with higher productivity than varieties such as Gesha, making it ideal for high-quality microlots and for those seeking sensory complexity in specialty coffee.

Fermentation Process

This coffee is processed using an innovative anaerobic process called “Mosto Anaerobic”, lasting 72 hours. During fermentation, the cherries are placed in airtight containers and immersed in a liquid (“must”) obtained from the previous fermentation of a Java variety. Rich in natural microorganisms, this must allows the beans to absorb unique and complex aromas, intensifying the sweetness and depth of the sensory profile.

This is followed by careful drying in two stages: first, controlled drying in silos to preserve quality, and then slow sun-drying lasting up to 18 days. The result is an elegant cup rich in distinctive aromatic nuances, an authentic expression of Colombian technique and terroir.

The Cup

In the cup, it reveals a tropical and enticingly sweet character: lively notes of strawberry and banana elegantly intertwine with nuances of red apple, jasmine, and pineapple. All of this is enriched by a delicate hint of vanilla and a surprising bubblegum finish, giving the coffee a unique and unmistakable identity.

This coffee is intended for connoisseurs seeking an exclusive sensory experience that perfectly combines the richness of Colombian terroir with the producers’ technical excellence.

Each cup represents a true aromatic journey, an authentic expression of the passion, creativity, and constant innovation that distinguish the Bayter family and their farm.

Recommended for Filter and Espresso — ideal as a filter coffee to bring out its tropical and floral notes, balanced and sweet as espresso.
