A coffee that tells the story of the new Costa Rican micromill revolution

In the heart of the Central Valley, where altitude, a stable climate, and volcanic soils create ideal conditions, Las Lajas Micromill – Finca Carrizal was born. Oscar and Francisca Chacón, third-generation producers, were pioneers in introducing high-quality Honey and Natural processes, transforming the Costa Rican coffee landscape.

A slow, controlled natural process

The Black Diamond Natural process starts with a rigorous selection of ripe cherries with high Brix levels. After an initial phase of aerobic fermentation in a thick layer, the cherries are spread in a thin layer for slow, controlled drying (20–30 days), which crystallizes the sugars in the mucilage without heat stress.

This processing produces a sweet, clear, and bright cup, with greater aromatic definition and complexity than the micromill’s other naturals.

A project bringing together quality and sustainability

Las Lajas is more than a farm: it’s a model of innovation and transparency, where every lot is traceable and carefully processed by hand. Oscar and Francisca Chacón continue to experiment and train other local producers, raising the standard of coffee in Costa Rica.

Clarity, sweetness, brightness

Costa Rica Las Lajas Finca Carrizal is a bright and complex coffee, with lively, fruity acidity balanced by elegant sweetness. In the cup, notes of green grape, cherry, currant, and elderflower intertwine with plum and raspberry.
A balanced structure, a medium-full body, and clean sweetness that evolves as it cools.
