The story
Nestor Lasso is among the producers redefining Colombian coffee. Ombligon cherries, picked at full ripeness and density-sorted, ferment whole under constant monitoring. At just the right moment, Nestor applies Thermal Shock: a rapid temperature change that stops fermentation and locks the aromas into the bean. This is followed by slow drying on raised beds for up to twenty days.
Competition-ready freshness
All Over Your Limits coffees are stored green, vacuum-sealed, and in the freezer, the same technique used for competition coffees, and we roast them only when you place your order. The cold stops green coffee beans from aging and protects their sugars, acidity, and aromas, so every batch reaches your cup with the same profile it had the day we first tasted it, even months after harvest.
Why Over Your Limits
Because it pushes fermentation to the limit without sacrificing clarity: extreme sweetness, zero chaos.
