Description

A spectacular coffee with a full-bodied, juicy texture and notes of coffee cherry, blueberry, cotton candy, and vibrant violet florals. It’s a complex coffee with impressive depth and a long-lasting aftertaste that continues to unfold with every sip.

The coffee cherries for Umbra grow at Finca Deborah, high above Volcán, Chiriquí, Panama, at an elevation of more than 1,900 meters. There, volcanic soil, a shady cloud forest, and cool nights allow the cherries to ripen more slowly and develop especially complex flavors. The coffee cherries for Umbra are naturally dried on raised beds in a special drying house to reach the desired moisture content of 11% while preserving the coffee’s distinctive qualities. The coffee is then left to rest so its flavor profile can stabilize and round out.

Finca Deborah, one of the world’s most famous, highest-altitude, and most remote Geisha farms, is shrouded in rainforest clouds for most of the year. Deborah’s soil is volcanic, highly organic, and rich in nutrients, making it ideal for growing coffee at extreme elevations. The high altitude and low temperatures slow the trees’ metabolism, allowing them to channel more sugar into the cherries as they develop. Deborah also receives ideal rainfall, averaging 2,200 mm per year. This is an excellent environment for growing any coffee variety, but Geisha, one of the world’s most challenging varieties, not only grows successfully here but also thrives. No pesticides or herbicides are used on Jamison’s farms.
