Typica Mejorada · Finca Soledad

The specially processed Typica Mejorada is an exceptionally sweet and clean filter coffee with an incredible flavor profile reminiscent of a blend of strawberry cotton candy and delicate white peach, with a sweet watermelon aftertaste. This standout coffee also has a very floral aroma and an exceptionally elegant character. At Finca Soledad, every step of the process is carried out with the utmost care and love for nature—day and night. Every lot they produce is unique and reflects the moment, the energy of the pickers, the balance of microorganisms in the soil, and the weather. Everything works together to create a work of art from nature. For this exceptional nanolot, only the ripest and finest coffee cherries were carefully picked. The cherries had an average Brix value of at least 18 and a maximum of 22. After harvesting, the cherries are hand-sorted. First, the coffee is aerobically fermented in an open environment to encourage oxidative fermentation. It is then mechanically depulped and fermented in its fruit pulp for 48 hours before being washed and slowly air-dried in the shade (slow drying). Finca Soledad is located on a picturesque mountainside overlooking a beautiful valley through which the Intag River flows. Pepe, who wanted to step away from his career as a mountaineer and researcher and reconnect with the land, bought the four-hectare property in 2010, believing it was perfect for that purpose.
Later, he discovered coffee and fell in love with it, beginning his new life as a producer of outstanding specialty coffee. The area around Pepe is beautiful and lush, but it had been deforested in the past, and Pepe and his team are working hard to replant trees across the land. To date, they have planted about 25,000 trees, and the property is slowly becoming the flourishing, lush paradise Pepe hopes to enjoy in peace. Growing coffee was not always easy and presented Pepe with a number of challenges. But over time, Finca Soledad became more sustainable and a place of peace and well-being for everyone who works there. When asked what makes his farm so special, Pepe replies, "This is my life; I find peace here." In a place that radiates inner calm and is, in turn, nurtured by the people who live there, it is no wonder that the flavors created here are also something special. Finca Soledad primarily grows the Typica Mejorada and Sidra varieties, along with small quantities of Geisha, Caturra, and Castillo.
