At Finca Soledad, every step of the process is carried out with the utmost care and deep respect for nature. Each lot is unique—a reflection of its moment. It speaks to the dedication of the pickers, the finely tuned interplay of microorganisms in the soil, and the influence of the weather. For this lot, only the ripest coffee cherries, with a sugar content of 22–23 °Brix, were carefully hand-picked. After harvest, the cherries are depulped, washed, and then slowly dried for 60 days under optimally controlled climate conditions. The green coffee is vacuum-packed for transport. Until roasting, we store it—as we do all our coffees—in our climate-controlled bean humidor. This helps preserve its freshness, aromatics, and quality as much as possible until roasting.

Finca Soledad sits on a picturesque mountainside overlooking the green Intag Valley, through which the river of the same name winds. In search of a simpler life and a deeper connection with nature, Pepe bought the four-hectare property in 2010—the beginning of a journey that would change his life. Over time, he discovered his passion for coffee and devoted himself entirely to growing exceptional specialty coffees. The area surrounding the farm is known for its impressive biodiversity, but much of it had been heavily deforested in the past. Together with his team, Pepe is working to restore the original forest. To date, around 25,000 trees have been planted, and the finca is gradually transforming back into a thriving, biodiverse ecosystem. The path has not always been easy. Growing coffee brought many challenges, but with patience, experience, and a clear vision, Finca Soledad has become a sustainable place where people and nature live in harmony. When asked what makes his farm so special, Pepe simply replies: “This is my life. I find peace here.” Perhaps that is exactly what you can sense in every cup. For when nature, time, and dedication come together, they create coffees of exceptional depth, elegance, and character. Today, the varieties grown primarily at Finca Soledad are Typica Mejorado and Sidra. They are complemented by small plots of Geisha, Caturra, and Castillo.
