This filter coffee combines fruit and depth for a multilayered tasting experience:

  • Aromas: Juicy stone fruits such as peach and apricot, with honey, delicate vanilla, and dark chocolate on the finish
  • Sweetness & Acidity: Fruity sweetness supported by a fresh, lively acidity
  • Body & Texture: Creamy, complex body with a long, honey-sweet finish

Each cup reveals a new facet, making this coffee the ideal companion for anyone who appreciates balance and complexity.

Origin: Toribío, Cauca—Where the Páramo Nourishes the Coffee Gardens

The San Francisco community’s farms lie on the eastern slopes of the Cordillera Central, in one of the most ecologically significant areas of the Colombian Andes. High above the coffee gardens stretches the Páramo, a rare high-altitude biome whose sponge-like soils store rainwater and slowly release it into the rivers. The Río Isabelilla rises in these hills and shapes the region’s terroir. At elevations of 1,300 to 2,300 meters, the cherries ripen slowly and develop their concentrated sweetness.

Farming and Processing: The Nasa Community

  • Farming: 242 smallholder families of the Indigenous Nasa cultivate the San Francisco plots by hand and in harmony with the region’s delicate ecosystem.
  • Variety: Castillo, a hardy Colombian Arabica variety that develops its full aromatic clarity at high elevations.
  • Processing: The hand-picked cherries are washed processed. This produces a clean cup and highlights the fruity sweetness.
  • Cooperative: San Francisco is part of the Cencoic Cooperative, which organizes more than 2,700 smallholder families from Cauca and supports them with harvesting and processing.

The close-knit community and traditional Nasa handcraft are reflected in the character of every cup.

Responsible Trade: Coffee as a Tool for Peace

In Cauca, coffee has special significance: Since the peace agreements, it has provided the Nasa with a stable, legal livelihood and is regarded in the region as a tool for peace. We source the green coffee directly through our partner Trabocca. With every purchase, you support the economic independence of the Toribío community.

Roast: Light Filter Roast for Maximum Flavor Variety

We roast San Francisco Reserva light, at an American roast level, carefully on our Diedrich drum roaster at our glass-walled roastery in Kiel. This preserves the clarity of the stone fruit, honey, and vanilla notes. Prepared as a pour-over, Chemex, Aeropress, or French press, this coffee reveals its full range of flavors.
