Description

Colombia San Francisco Reserva Espresso: Dark Chocolate and Honey with 88.5 Points

Experience a Single Origin espresso from Cauca, Colombia, that combines strength and elegance with the San Francisco Reserva Espresso. Grown by 242 families of the Indigenous Nasa people in Toribío, it brings dark chocolate, honey, and juicy stone fruit to your cup. Its cupping score of 88.5 points attests to the exceptional quality of this green coffee.

Flavor Profile: Deep Chocolate with a Fruity Core

As an espresso, San Francisco Reserva shows its bold yet elegant side:

  • Flavors: Dark chocolate and honey up front, with juicy stone fruit and a hint of vanilla underneath
  • Sweetness & Acidity: Fruity sweetness with fresh, clearly structured acidity that keeps the espresso lively
  • Body & Crema: Creamy, complex body with dense crema and a long, chocolatey finish
  • With Milk: In a cappuccino or flat white, chocolate and honey come together in a smooth, caramelly note

An espresso for anyone who appreciates intensity without giving up fruit and finesse.

Origin: Toribío, Cauca – Highlands Between Two Mountain Ranges

The coffee gardens of the San Francisco community lie on the eastern slopes of the Cordillera Central, near where it meets the Cordillera Occidental. The region is one of the most ecologically valuable zones in the Colombian Andes: highland forests and the rare páramo store rainwater like a sponge and supply the plots steadily. At elevations of 1,300 to 2,300 meters, the cherries ripen slowly and develop the concentrated sweetness that defines this espresso.

Growing and Processing: Handcrafted by the Nasa

  • Growing: 242 smallholder families of the Indigenous Nasa people tend their plots by hand, nestled among highland forests and water protection zones.
  • Variety: Castillo, a Colombian Arabica cultivar that produces especially clear, sweet cups at high elevations.
  • Processing: Washed. Careful washed processing creates the clean, precise structure this espresso shows when prepared in an espresso machine.
  • Cooperative: The community is part of the Cencoic Cooperative, which includes more than 2,700 smallholder families and supports its members with harvesting, processing, and marketing.

Every batch bears the mark of this community, from harvesting the ripest cherries to drying them.

Responsible Trade: Coffee as a Tool for Peace

In Cauca, coffee is more than an export product: Since the peace accords, it has provided the Nasa people with a stable, legal livelihood and is seen in the region as a tool for peace. We source the green coffee directly through our partner Trabocca, strengthening the economic independence of the families in Toribío.

Roast: City Roast for Espresso Machines and Super-Automatics

For this espresso, we roast the beans to a City roast on our Diedrich drum roaster in our glass-walled roastery in Kiel. Roasted a little darker than our filter roasts, it brings the chocolate notes to the forefront while keeping the fruit and acidity lively. Ideal for espresso machines and super-automatics, enjoyed straight as an espresso or as a base for cappuccinos and flat whites.
