A vibrant, layered coffee balancing sweetness and intensity
In the heart of the Gakenke region of Rwanda, Marfak AFRE is produced by Emmanuel Rusatira at Muzo Washing Station.
This area, characterized by high altitudes and stable climatic conditions, allows the Red Bourbon variety to express a rich, complex, and dynamic aromatic profile.
The result is an intense yet elegant cup, where sweetness and structure blend with clear flavor definition.
During extraction, notes of strawberry and red plum emerge, followed by tropical hints of mango.
The sweetness brings to mind honey and maple syrup, while a floral rose finish adds depth and refinement.
A juicy, enveloping, and layered cup, with lingering sweetness and gentle acidity.
Anaerobic Sleeping Bag: controlled intensity
The Anaerobic Sleeping Bag process is a modern technique that combines controlled fermentation with precise drying.
After the cherries are carefully selected, the coffee is fermented in an anaerobic environment, meaning in the absence of oxygen.
This stage develops more intense aromas, increases complexity, and amplifies the fruity character.
The cherries are then dried outdoors using the Sleeping Bag technique, which helps maintain stability and uniformity during drying.
This approach ensures a balance of aromatic intensity, sweetness, and clarity, avoiding excessive fermentation and preserving the profile’s definition.
The result is a rich yet controlled cup, where every note is clear and distinct.
Baho Coffee: vision, quality, and social impact
Emmanuel Rusatira is the founder of Baho Coffee, an organization established in 2016 with the goal of showcasing Rwanda’s potential through high-quality coffee.
After more than 15 years of experience in the industry, he has developed a network of washing stations across several regions of the country, working closely with local producers.
The name “Baho” means to live, be strong, and overcome hardship—values that guide the project both in its people-centered approach and its production.
Purchasing this coffee also supports local projects, including initiatives related to breast cancer prevention in Rwanda, strengthening the connection between quality and social impact.
Rwanda: precision and aromatic identity
Rwanda is now one of the most exciting origins in specialty coffee, thanks to its high altitudes, temperate climate, and Bourbon varieties.
These conditions produce coffees with elegant acidity, natural sweetness, and excellent flavor definition.
Attention to innovative processes, such as controlled fermentation, is helping the country produce increasingly distinctive and contemporary profiles.
A coffee for those seeking intensity and complexity
Rusatira Anaerobic Sleeping Bag is ideal for filter brewing, where it can best express its structure and evolving aromatic profile.
Perfect for those looking for a fruity, sweet, and layered cup, with an elegant, never overpowering fermented character.
A dynamic coffee that changes as you taste it and invites you to explore every detail.
