Description
WHOLE BEAN. If you need the coffee ground, please leave us a note with your order telling us how you prepare your coffee so we can adjust the grind size. We can’t guarantee the grind for portafilter machines, as all machines work differently.
Finally, another delicious, fruity-sweet Peru microlot.
This coffee is first double anaerobic fermented, meaning without air. First, the whole cherries are fermented in sacks or barrels. After two days, the cherries are depulped and fermented anaerobically for several more days in barrels or sacks. The coffee is then processed using the “washed” method. This process creates delicate fermented notes while preserving the typical character of Peruvian coffees: plenty of body, dark chocolate, lots of sweetness, and red fruit. To bring these flavors to life, we roast the coffee exclusively as a light filter roast. It’s a very special microlot :)
The Rutas del Inca cooperative is located in northern Peru (Cajamarca). It’s a new cooperative that supplies us with excellent coffees through Roasters United. In fall 2024, we visited the farmers, who are true fermentation experts—the coffee is sooo delicious.
