Description

Finca Deborah’s Illumination Process: peach, mango, and black tea in a bright, velvety cup.

In the cup

It opens with peach and mango, followed by black cherry, honey, and black tea. As it cools, floral and citrus notes emerge, with clean malic acidity that brightens the sweetness. Velvety body, crisp finish with notes of white flowers and stone fruit.

Perfect if…

  • you love fruity coffees with a pristine profile;

  • you’re looking for a coffee to savor slowly.

The story

At Finca Deborah, every microlot is monitored by sensors, and cherries are hand-picked only between 21 and 24 degrees Brix. In the Illumination Process, the coffee is depulped with the mucilage left on, then fermented for about 100 hours in sealed tanks with filtered light and limited oxygen. Finally, it is washed and slowly dried in the shade on raised beds.

Competition-level freshness

All Over Your Limits coffees are stored green, vacuum-sealed, and in the freezer, the same technique used for competition coffees, and we roast them only when you place your order. The cold stops the green beans from aging and protects their sugars, acidity, and aromas, so each lot reaches your cup with the same profile it had the day we first tasted it, even months after harvest.

Why Over Your Limits

Because it combines the transparency of a washed coffee with the complexity of fermentation.
