Panama Boquete Coffee: Where It Is and Why This Origin Matters

Most people associate Panama with the canal, not with coffee origin. But in the specialty coffee world, Panama has become an important name, largely thanks to the Gesha variety, which came onto the scene in 2004 when a farm in Boquete won the Best of Panama competition with unprecedented scores. Since then, Boquete has been on every specialty roaster’s map.

The Boquete region is in Chiriquí Province, in the western part of the country, on the slopes of Barú Volcano—the country’s highest peak (3,475 m). The coffee in this lot is grown at an altitude of 1,350 m, in an area with a temperate microclimate influenced by breezes rising from the Pacific and Caribbean along opposite slopes of the volcano. The soil is volcanic, well-drained, and rich in minerals.

The area’s history dates back to the 19th century, when European immigrants began growing Arabica on the hills around the town. The region is small—we’re not talking Brazilian volumes—but the quality of its lots makes up for it with consistency and clarity in the cup.

100% Arabica Coffee Beans: Caturra and Typica

This lot combines two classic varieties. Typica is one of Arabica’s two foundational genetic lineages (the other is Bourbon)—it produces clean, sweet coffees with delicate acidity. Caturra is a dwarf mutation of Bourbon, with more pronounced citrus acidity and higher productivity. Together, the two complement each other: Typica brings sweetness and finesse, while Caturra brings acidity and structure.

The beans are screen size 16/17, which means they’ve been sorted uniformly to help with roasting—each bean receives the same heat energy, making extraction in the cup more predictable.

Honey Anaerobic Processing Method

This lot is processed using the honey anaerobic method. After harvesting, the pulp is removed, but some of the sweet mucilage remains on the bean. The beans then ferment in a controlled, oxygen-free environment before drying. Unlike a washed lot, where the mucilage is completely washed off, here some of the fruit sugars remain in contact with the beans during fermentation and drying.

Flavor Profile: Caramel and Fruit

Panama Boquete is a coffee that doesn’t overwhelm you. The body is medium to low—light, without the weight of a Brazilian lot or the full body of a Burundi. The acidity is medium-high: present, but not dominant in the cup. It’s a balanced coffee that lets you taste each note individually.

Caramel is the base note—a warm, rounded sweetness that appears with the first sip and lingers in the finish. Fruit rounds out the profile with a slightly citrusy acidity and a freshness that brings the cup to life. The combination of caramel and fruit with a light body makes for a coffee that’s easy and pleasant to drink, without palate fatigue.

The intensity is medium-low—that doesn’t mean “weak,” but rather subtle. This is the coffee for you if you want something delicate and refined, not in-your-face. If Brazil Cerrado is the comfort coffee and Kenya Nyeri is the adventure coffee, Panama Boquete is somewhere in between: elegant without being complicated.

How to Brew Panama Coffee at Home

Its medium-to-low body and medium-high acidity make it versatile enough for several brewing methods.

Espresso Recipe

Dose: 18 g coffee (fine grind)

Yield: 36–40 g in the cup

Extraction time: 25–30 seconds

The shot is clean, with a thin but stable crema and caramel aroma up front. The acidity comes through as a slight brightness, not sharpness. In a cappuccino or flat white, the caramel blends naturally with the milk, without competing notes.

☕ Corretto tip: If you want more sweetness and less acidity, reduce the yield to 34–36 g (1:1.9 ratio). A shorter extraction concentrates the caramel and reduces the fruity notes.

Brew Recipe (V60 / Chemex / Drip)

Dose: 15 g coffee for 250 ml water

Grind: Medium (like coarse salt)

Water temperature: 92–95°C

Total time: 3:00–3:30 minutes

With drip brewing, the fruity notes open up more than they do in espresso. Caramel remains the base, but gains a transparency you don’t get under espresso machine pressure. It’s a coffee that shines in a V60—clean, light, and pleasant.

☕ Corretto tip: Let the beans degas for at least 7–10 days from the roast date (printed on the bag) before grinding. With a coffee that has a lighter body, the difference in clarity is even more noticeable.
