Honduras has become a bigger origin for us over the last few years. Big-bodied coffees that are chocolatey and nutty are so popular. Building supply chains has become challenging, as commitments come at a high price for producers. I am excited to say that we may have found Honduras Los Naranjos, which is producing some great coffees. Hopefully, we can work with these guys for years to come. Long-term relationships are the bedrock of what this business is all about.

Cup Potential:

Aromatics: Big Chocolate| Body Buttery| Acidity: Soft citrus|

Solid chocolate, white fruit sugars with a soft citric finish.

Espresso

This brews like a traditional espresso roast. It cuts through milk so well that you could run this with oat or another alternative to dairy if you so wish.

From the biggest drink downwards:

9oz Milk-based drink: Black Treacle, brown sugars, tasty covetable cosie drink

6oz milk-based drink. Big depth of chocolate and cocoa.

Espresso: Dark chocolate, juicy fruit, and a soft citrus finish.

The Physical Espresso recipe :

Based on a brew temp of 94C

16g-18g ground coffee/34-6g espresso liquid in 28-34 seconds for milk-based drinks.

16-18g ground coffee/45-50g espresso liquid 28-32 seconds for espresso/ Americano

Having finally found a single farm in Honduras, producing the volume and quality of organic coffee that we need, Sebastian kindly dropped in and went to quiz the Mayorga family about their family history. You can read the results here.

Cafesmo was formalised in 2016 and has grown in what and how they process coffee. Cafesmo is based in a large zone around the hills of Mercedes, located in the very south of Honduras, a stone’s throw from El Salvador and Guatemala. Our plantations are protected by some of the country’s highest peaks.
