This exclusive Geisha is highly complex, bringing together a unique symphony of flavors with a syrupy mouthfeel and a deep, lingering finish. It evokes sweet peach pie and lychee, with brown sugar sweetness and delicate floral notes. After harvest, the perfectly ripe Geisha cherries, with a BRIX value of 21–24, are sorted twice and stored in hermetically sealed stainless steel tanks at cool ambient temperatures for more than 100 hours. During this time, nitrogen is periodically introduced into the tanks to remove residual oxygen. To ensure consistent quality, the internal and external temperatures and pH levels are checked several times a day during this extended fermentation phase. The cherries are then slowly dried for up to 30 days on Finca Deborah’s three-tier, even-drying system. This advanced natural anaerobic process with nitrogen maceration transforms the coffee cherries into a symphony of unique, syrupy flavors.
