Description

WHOLE BEAN. If you need the coffee ground, please add a note to your order telling us how you prepare your coffee so we can adjust the grind size. We can’t guarantee the grind for portafilter machines, as they all work differently.

For this coffee, too, only the ripest cherries are selected for natural processing, sorted, cleaned, and placed on raised beds in a covered area to dry for at least two weeks. It also grows in a mixed-crop system, which is very sustainable. Let yourself be surprised by a cup profile that is floral, fruity, and easy to drink. The coffee is wonderfully sweet and sticky, with notes of dates, sugar syrup, and red apple.

Cauca is in western central Colombia, and the sea breezes and elevation make it one of the country’s coolest regions. Coffee in this area is grown primarily by Indigenous or Afro-Indigenous communities. The “Paez” are the largest Indigenous group in the country. The cooperative, with its 550 members, aims to support traditional farming practices and preserve the Indigenous culture that has been oppressed for many years. Fondo Paez exports its coffee with ExpoCosurc, a local exporter based in Popayan that helps the local community access international markets.
