Kolumbien - El Bombo Women BIO / Filterkaffee

This excellent lot was processed by 15 female coffee farmers from the Asobombo Cooperative in Huila. Most farms in the Pitalito region are around 3–5 hectares, making them somewhat larger than those elsewhere in Huila. The region was more heavily settled in the 19th and 20th centuries, as there was still a great deal of fertile land available. Huila is generally considered one of Colombia’s best coffee-growing regions, and Colombia is already known for its particularly high coffee quality.

The women of the Asobombo Cooperative hand-pick their ripe, sweet cherries and begin processing right on the farm. After depulping, the coffee beans ferment in water tanks for 12–36 hours. The parchment is then washed and dried on covered raised beds. Because of the high humidity in the region, the parchment is turned especially frequently to ensure even drying.

This bright, summery filter coffee shines with the fruity sweetness of red currant and citrus zest, tea-like notes reminiscent of green Sencha tea, and a delicate biscuit finish.
