Description

Sugar cane decaffeination

The sugar cane process gets its name from the ethyl acetate used to decaffeinate the coffee.

Ethyl acetate is a natural compound derived from sugar cane that can be found in fruit and other foods. Because it is derived from sugar, ethyl acetate binds to the chlorogenic acids found in caffeine. When ethyl acetate binds to the chlorogenic acids, caffeine begins to separate from the coffee bean.

Here’s the process, step by step:

  1. The green (unroasted) coffee is received in tanks.
  2. It undergoes a low-pressure steaming process for 30 minutes to open the pores of the bean, allowing the caffeine to be extracted.
  3. Once the coffee is ready, it is immersed in the ethyl acetate solution for a set period of time. During this time, the ethyl acetate binds to the chlorogenic acid and separates the caffeine from the rest of the coffee bean.
  4. The coffee beans reach a saturation level that requires the tank to be emptied and refilled with fresh solution. This process is repeated and continues for about eight hours, or until the coffee has been sufficiently decaffeinated.
  5. Once all the caffeine has been removed, the coffee beans are prepared for a second steaming process. This second steaming removes all traces of ethyl acetate.
  6. Once the decaffeinated coffee is dried, it is polished to ensure it stays clean, then packaged and distributed.

Decaffeinated coffee beans are darker than beans that have not been decaffeinated.

We like the sugar cane process because the ethyl acetate used is derived from sugar cane and doesn’t sacrifice the coffee’s flavor.

Decaffeination percentage

The sugar cane process removes 97% of the caffeine while preserving great flavor.

The distinctive feature of this decaf is that it retains most of the coffee’s flavor, but without the caffeine. This is possible because the decaffeination process uses no artificial chemicals, and because of a delicate roast that preserves its sensory qualities. Ideal for anyone who likes the taste of coffee but can’t consume caffeine.
