Terroir

COLOMBIA

TOLIMA • CENTRAL-WESTERN TOLIMA
The Terroir

The department of Tolima is nestled in the heart of the Central Andes. While it benefits from a climate that is highly favorable to coffee cultivation, the department has also been affected by armed conflict and drug trafficking. The reduction in these conflicts and trafficking has allowed the region to explore new opportunities, and it has only recently embarked on coffee production and export. Typically, Arabicas from this region are floral, with notes of citrus.

The Coffee and the People

This coffee is produced by a FairTrade- and organic-certified cooperative that brings together more than 55 farmers. To produce this excellent coffee, the cooperative has invested in building, improving, and maintaining the infrastructure required for such production. Roads have been improved, and members have received training in coffee harvesting and processing methods. In a region where jobs outside of coffee cultivation are very limited, it is essential to offer young people new opportunities to help keep them from becoming involved in crime. That is why FairTrade associations organize classes to develop coffee extraction skills by training baristas, as well as training in quality control and business management. Members also have better access to agronomic, commercial, and financial support (in addition to all the other benefits of the cooperative).

Harvest and Processing

The producers process their own cherries on their farms. The cherries are hand-picked and depulped on site. After fermentation, the beans are rinsed with water to remove any remaining mucilage. The parchment is then sun-dried.
