A Brazilian natural with a classic, comforting profile

San Rafael comes from the Cerrado Mineiro region, one of Brazil’s most established areas for quality coffee production. Here, at altitudes between 800 and 1,300 meters, the stable climate and well-defined seasons allow the cherries to ripen evenly, encouraging rounded, structured profiles.

The Catuai and Mundo Novo varieties, long rooted in Brazilian territory, help create a solid, consistent cup in which sweetness and body take center stage. The combination of terroir and natural processing results in a coffee with a pronounced chocolate character, designed to offer balance and aromatic consistency.

Natural process: sweetness and structure

The traditional natural process involves drying the whole cherries immediately after harvest. The cherries are spread outdoors and left to dry slowly, allowing the sugars in the fruit to gradually transfer to the bean.

During this stage, the fruit develops gradually, bringing out riper notes and more concentrated sweetness than in washed coffees. Controlled drying helps preserve stability and consistency while maintaining a clean, well-defined structure.

The result is a rounded aromatic profile with restrained acidity, medium body, and a soft, enveloping texture.

Cocoa, dried fruit, and depth

Notes of raisins and dried fruit emerge in the cup, followed by an intense cocoa and dark chocolate character. The sweetness is consistent and well distributed, with a long, slightly toasted finish.

The acidity is low and well integrated, and the body is medium, with a soft, smooth feel. The structure is stable, offering everyday drinkability without losing character.

A coffee for those seeking comfort and substance

San Rafael Natural is ideal for espresso, where its chocolate character and roundness shine. It also works well in a moka pot and in brewing methods that bring out body and sweetness.

A classic, reassuring, and consistent coffee that showcases Brazil’s more traditional side in a balanced, easy-to-understand cup.
