We welcome the Tabi variety that makes up Apóstoles coffee. This variety lends the drink its signature sweetness. Taken as a whole, Apóstoles evokes Colombia: its landscape, home, dawn, and lingering meals. Aromatic notes from enzymatic reactions and sugar caramelization predominate. Its fragrance suggested the fresh, fragrant scent released when you open a ripe cherimoya, while its aroma brought to mind the extraction of sugarcane juice. A maple syrup base with notes of lemongrass. A well-behaved coffee when prepared as espresso, in a super-automatic machine, in a moka pot, or as a pour-over. Although we enjoyed Apóstoles most when drinking it black, it also pairs well with milk or plant-based beverages.

Description

Apóstoles, coffee from Huila

Apóstoles is a coffee grown in the Department of Huila, a region in southern Colombia.

Coffee from Huila

Huila is a region made up of farming communities spread across 35 municipalities.

In Huila, 83,000 families grow Arabica coffee, with Castillo, Colombia, Caturra, Típica, Borbón, and Tabi among the varieties grown.

Since 2013, Huila has held the “Denomination of Origin” certification. Overall, its coffees are characterized by balance, sweet notes, medium-to-high acidity and body, an intense fragrance and aroma, and fruity, caramelized sensations.

Huila’s coffee-growing area is divided into four regions, each producing coffees with distinctive characteristics:

Northern Region: Its coffees are characterized by strong aromas and flavors with notes of citrus, panela, red fruit, and dark chocolate, along with medium acidity and a medium, creamy body.

Southern Region: Its coffees have a chocolate fragrance and aroma, good sweetness and red fruit, fruity notes, coffee blossom, medium-high acidity, and a balanced medium body. Apóstoles comes from this region.

Central Region: Its cup profile is characterized by an expressive floral fragrance and aroma, a fruity flavor with caramel notes, citrus acidity, and a rounded, creamy, balanced, clean body.

Western Region: Its coffees are characterized by citrus and floral fragrance and aroma, a flavor with sweet-and-sour, citrus, and yellow fruit notes, medium acidity, and a balanced, creamy medium body with a lingering finish.

Tabi: an expression meaning “good” in the Guambiano dialect.

Colombia is home to one of the world’s most prestigious coffee research centers: CENICAFÉ.

Thanks to CENICAFÉ, varieties have been developed that resist pests, adapt to different environments, and deliver good cup profiles.

Tabi, the variety that makes up Apóstoles coffee, is the result of its work. It comes from a cross of the Typica, Borbón, and Hibrido de Timor varieties.

It is characterized by a tall-growing tree, good resistance to pests, and a high cup profile.
