Description
Santa Maria is a decaffeinated coffee whose roast profile makes it shine as both espresso and filter coffee. It’s for those looking for a decaf who don’t want to give up a delicious, aromatic cup. Look forward to rich notes of chocolate mousse and caramel, balanced by the juicy sweetness of grapes and a delicate hint of almond. A harmonious cup with plenty of depth and juiciness, no matter how you brew it.
This green coffee from Colombia is decaffeinated using the so-called “Sugar Cane” process. We deliberately chose this decaffeination method because it is particularly gentle compared to other common methods and preserves the coffee’s distinctive qualities very well. This decaffeinated coffee from Santa Maria was first processed using the classic washed method before being decaffeinated at Decafecol in Chinchiná using the so-called Sugarcane Decaf process. After harvesting, the coffee is processed using the washed process, which creates clarity and a lovely sweetness in the cup. The green coffee is then taken to the decaffeination facility, where it is first steamed and moistened to open up the structure of the beans. The caffeine is then removed using ethyl acetate, a natural compound derived from sugarcane. This process is particularly gentle and preserves as much of the original flavor profile as possible. The beans are then steamed again to remove any residue and slowly dried back to their original moisture content.
The result is a clean, balanced decaf that preserves the coffee’s character—without the caffeine.
Cuatro Vientos is a family-run project from Huila, Colombia, founded in 2018 by the Gonzalez family. The name comes from their first farm and has special meaning to them—especially to Yonatan Gonzalez, the managing director, who grew up there. A third-generation coffee producer, he brings not only extensive experience but also a strong understanding of logistics and trade, thanks to his background in logistics and his father’s work buying coffee. Cuatro Vientos works in various parts of Huila, including Santa Maria, where this coffee comes from. The region is characterized by diverse microclimates and a long tradition of coffee processing, resulting in coffees with clear structure and pleasant, natural sweetness. The focus is always on collaboration among equals, transparency, and long-term partnerships. Cuatro Vientos grows together with its producers—step by step, harvest by harvest.
