ABOUT THE FARM.

At El Mirante, the Mendoza family considers passing knowledge down through generations an everyday practice. Knowledge is shared from older to younger family members, both in the fields and at the mill, and the next generation is already taking responsibility for key steps in cultivation and processing. Working side by side, they refine their routines and help maintain quality and care year after year.

El Mirante is a small farm, even by Peruvian standards, with just 3 hectares. Its limited size requires the Mendoza family to use rigorous cultivation methods to ensure their coffee operation remains optimally profitable. Their agricultural practices lean toward organic farming by default, and the coffee is grown under the shade of native trees, thereby preserving biodiversity.

The Mendoza family hand-selects only ripe red cherries and processes them on the farm. The coffee is pulped and then fermented, making use of the cool high altitude, which naturally slows the fermentation process. The parchment is then washed with clean water and moved to shaded raised beds. They turn the layers frequently to ensure even airflow and consistent moisture loss. Drying takes about 20 days.
