ABOUT THE FARM.

Pascual Jiménez is a second-generation coffee farmer with a long family tradition in Buena Vista. Pascual is the Mayan leader of a special committee in the local Mayan community in his town. He is well known among residents and respected for his wisdom. Today, Pascual farms Finca Familia Jiménez alongside his children and daughter-in-law. He was the first coffee farmer in San Pedro Necta to work with Rosma Coffeelands and begin exporting his coffee through them.

The coffee cherries are hand-picked and pulped using a drum pulper. The coffee is dry fermented in a tank for 40 hours before being washed with clean water and passed through a sorting channel that separates the parchment by density.

The parchment is spread out to dry. For the first two days, it is spread in a very thin layer and raked frequently to ensure even drying. After the second day, the layers of parchment are gradually thickened to slow the drying process. The parchment takes 8 to 10 days to dry. Once dry, it is placed in jute sacks and sent to the processing plant in Huehuetenango to rest. The parchment rests for approximately 3 months before being prepared for export.

ABOUT THE REGION.

Huehuetenango is known for its high altitude and consistent weather patterns. The region lies where a warm air mass moving east from the Tehuantepec plains in Oaxaca, Mexico, meets a cold air mass descending from the Cuchumantanes mountain range. The meeting of these warm and cold air masses creates a microclimate that prevents frost and allows coffee to be grown at higher altitudes. Coffee production at 2,000 meters above sea level is common in this region. These conditions are ideal for producing the vibrant acidity and distinctive fruity flavors characteristic of the region.
