The story

Finca Deborah sits at nearly 2,000 meters in Volcán, where Jamison Savage tracks every plant and controls light, humidity, and airflow. For Enigma, whole cherries ferment in sealed, oxygen-free tanks, with temperature, pH, and pressure constantly monitored, then dry slowly in the shade on raised beds.

Competition-level freshness

All Over Your Limits coffees are stored green, vacuum-sealed, and in the freezer—the same technique used for competition coffees—and we roast them only when you place your order. The cold halts the aging of the green beans and preserves their sugars, acidity, and aromas, so every batch reaches your cup with the same profile it had the day we first tasted it, even months after harvest.

Why Over Your Limits

Because it’s unpredictable: every sip reveals something new.
