Description

This complex Geisha has a very special flavor profile, as it was processed in a rum barrel. Expect a creamy body with notes of crème brûlée and the sweetness of Manuka honey. It also has the elegant character of a Geisha and many delicate notes reminiscent of jasmine blossoms. Definitely a coffee that will be remembered. INDELIBLE—a name that stands for unforgettable moments and does this coffee justice. The journey of this exceptional coffee begins with the harvest of fully ripe Geisha coffee cherries, which reach a reading of 24 on the BRIX meter. Each cherry is carefully selected to ensure that only the best, fullest-bodied fruit is used. After selection, the cherries are stored in a tank for an extended period while the pH, temperature, and CO2 levels are carefully monitored. Every step is carried out with the utmost precision and dedication to ensure that the coffee can reach its full potential.

Before the coffee cherries are finally separated from the pulp, they go through another special step. They are placed in a rum barrel for a certain period, where they take on the barrel’s aromas and flavor notes. The barrel is gently rolled to ensure the coffee is infused evenly. This unique finishing process gives the coffee an added dimension and makes it a special taste experience.
Finally, the remaining pulp is removed from the beans, and the coffee beans are sorted by size, density, color, and shape. Each bean is handled with the utmost care so that only the best and most perfect beans make their way into your cup.

The coffee is then carefully spread out on shaded, raised African drying beds. Here it is dried with the utmost care, avoiding direct sunlight to prevent cracks in the parchment. Temperature and humidity in the drying houses are strictly controlled and kept within specific parameters. Every coffee bean is handled with love and passion so it can fully develop its unique aromas and flavor nuances. But the Indelible’s journey does not end there. After the coffee has been dried to about 11%, it is packed in special GrainPro bags and stored in the bodega. Here it can rest, balance its moisture content, and absorb more aroma from the parchment. This resting period is essential to the coffee’s quality and distinctive character. The coffee is then prepared for export in vacuum-sealed 15-kilogram packages. Finca Deborah is dedicated to growing, processing, and delivering only the highest-quality coffee in the world. Finca Deborah is located at an altitude of more than 1,900 meters and nestled deep in the mountains of Volcan, where it is shrouded in dense clouds for most of the year. The plantation offers a beautiful, natural environment where rare plant and animal species thrive and where Geisha coffee can reach its full potential under the protection of the lush rainforest. Careful monitoring of the harvest process is one of the most important steps in a long list of quality control requirements. By hand-picking only the ripest cherries and processing those that meet our high standards, we can ensure that Finca Deborah Geisha is among the best Geisha coffees in the world.
