Description

Finca Deborah Geisha Interstellar comes from Finca Deborah, one of the world’s best-known farms for Geisha, located in the Volcán area of Chiriquí Province, Panama. The producer is Jamison Savage, a former finance professional from the United States who left his career to produce specialty coffee in Panama, where his family moved in 2008. Since then, his farm has become a landmark: it is the only farm in the world whose Geisha has ever won the World Barista Championship (Berg Wu, 2016), and its coffees regularly appear on the stages of major industry competitions.

Finca Deborah sits at over 1,900 meters above sea level, in a cloud forest ecosystem where fog and low temperatures slow the cherries’ ripening. This slow ripening helps the coffee develop the clarity and aromatic complexity for which it is increasingly sought after. The cherries are hand-picked at peak ripeness, and the trees are picked several times during the harvest so that only perfectly ripe fruit makes it into the lot.

Interstellar is processed using the Yeast Inoculated Natural method. The cherry fermentation is guided with selected yeasts, added specifically to direct the development of the aromas, and then the whole cherries are dried on raised beds. They are turned by hand regularly during drying to ensure even drying. The result is a coffee that uses advanced processing to highlight the variety and terroir, not cover them up.

In the cup, Interstellar develops notes of honeysuckle, rose tea, mango, and ripe strawberries, with a syrupy texture and pronounced sweetness. An expressive, aromatic Geisha, with a profile where flowers and tropical fruits naturally complement each other.
