Description

Idedo Natural is a coffee from Ethiopia’s iconic Yirgacheffe region, in the heart of the Gedeo zone. Grown at elevations of 1,960 to 2,100 meters in a relatively cool climate that allows the cherries to ripen slowly, it showcases the finesse and aromatic complexity characteristic of Ethiopia’s finest coffees. Established in 2023, the Mount Idedo washing station carefully selects cherries from several nearby kebeles, including Idedo, Wogida, and Gerbota. Producers hand-pick the cherries at peak ripeness, then carefully sort them before drying them whole on raised African beds for 12 to 21 days, turning them regularly to ensure even drying. This natural process gives the coffee great aromatic intensity and remarkable sweetness. Made from the Dega 74110 and 74112 varieties, this Arabica has a vibrant, expressive profile. We chose a relatively light roast to preserve the terroir’s vibrancy and complexity. In the cup, it reveals indulgent notes of candied strawberry, mango, and agave syrup, supported by a silky texture and bright acidity. Especially recommended for slow coffee.
