Description

El Jardín originates in Honduras, between 1,500 and 1,600 meters above sea level, in an environment where the altitude and climate encourage slow maturation and dense beans, qualities that translate directly into the cup. Honduras is not one of the most renowned specialty coffee origins, which is precisely why every lot from here that arrives with this level of quality deserves special attention.

Behind this lot is Mario Samuel Mejía Rodríguez, a producer who grows the Pacas variety in the conditions shaped by his farm’s altitude and climate, embracing processing techniques that go beyond the conventional to bring out each cherry’s full potential. It’s meticulous work that starts in the field and doesn’t end until the coffee is ready to ship.

This Pacas lot is processed using the Natural Anaerobic method for 90 hours. After the cherries are hand-picked at peak ripeness, the coffee undergoes carefully controlled fermentation without oxygen for three and a half days, during which aromatic compounds develop and give the cup its intense, fermented, highly expressive character. This demanding process, which requires precise control of temperature and timing, results in a profile with great depth, pronounced sweetness, and a complexity that surprises from the first sip.

In the cup, El Jardín offers an intense, sweet, and deeply enveloping profile. Red fruits open with vibrant, juicy, expressive fruit that defines the coffee’s character from the first sip. Raisins add a deep, concentrated, dark sweetness that brings body and lingering flavor, while almond adds a smooth, comforting toasted note that rounds out the profile. Brown sugar finishes with an integrated, warming sweetness that brings elegance and a long, indulgent aftertaste. With medium-high body and medium-high acidity, it makes for an intense, complex, and exceptionally expressive cup.

Scoring 86.25 and roasted specifically for filter, El Jardín reveals its full complexity in brews where red fruits and raisins open up broadly, while almond and brown sugar come through with all their depth and warmth. A coffee for those seeking cups with fermented character, deep sweetness, and a complexity that invites close attention.

El Jardín is an expression of Honduran coffee at its most daring: a classic variety, a process that pushes fermentation to the limit with precision and control, and a cup that brings fruit, sweetness, and depth together in perfect harmony.
