Description
Tropical Bahía was born from a unique circumstance in Brazilian coffee. Grown at the highest elevations in the state of Bahia, between 1,000 and 1,200 meters above sea level, this area offers some of the country's best conditions for coffee. However, the humidity and frequent rains during harvest make optimal drying in the region itself very difficult. So producers have developed a solution that is as creative as it is surprising: moving the coffee 50 km away to the neighboring Caatinga biome, known for its hot, dry climate.
Behind this lot are Manoelito Ataide Santos, of Fazenda Baixadão, and Sidmar Candido Da Silva, of Fazenda Campo Belo. These two coffee-growing families combine tradition and collaboration: at Baixadão, Manoelito inherited the trade and knowledge from his father, which he continues to put into practice today; at Campo Belo, Sidmar's family works together through every harvest and post-harvest stage, always striving to improve the quality of their coffee. Olam, Syra's local partner, supports these producers through its mobile buying unit (the Olam Truck), which reaches the most remote areas during harvest.
What makes Tropical Bahía unique is its fermentation process. After harvesting, the cherries travel in enclosed trucks to Caatinga, where the dry climate allows for optimal drying. During the journey, which never lasts more than 24 hours, the cherries undergo controlled fermentation in low-oxygen conditions. This combination of transport, fermentation, and drying in a dry climate results in a cup with a very fruity, sweet, and clean profile.
In the cup, Tropical Bahía is expressive and delightfully indulgent. Notes of toasted almond create a creamy, comforting base, while blackberry and red berries bring fruity sweetness and a distinctive juicy quality. Vanilla rounds out the profile with a warm, aromatic note. A well-rounded, sweet, approachable cup, made for those looking for a Brazil with personality and fruity character.
Scoring 84 points and roasted specifically for espresso, Tropical Bahía is ideal for enjoying as a short espresso or with milk, where its sweetness and fruity character shine in all their complexity. A testament to how creativity and knowledge of the land can turn challenges into an extraordinary cup.
