This yellow honey Villa Sarchi from the Aguilera Brothers in Los Robles de Naranjo, West Valley, is a vibrant expression of Costa Rican coffee: precise, characterful, and deeply sweet. Grown and processed at the family’s micromill, it reflects decades of focused farming and meticulous post-harvest work.

In the cup

Bright notes of star fruit lead into baked pear and a toffee-like sweetness. The acidity is juicy and well-defined, with a clean, lingering finish that rewards careful extraction and remains wonderfully drinkable.

Why this lot stands out

Villa Sarchi is a Costa Rican mutation closely related to SL-28, and here it delivers the clarity and ripe fruit character we look for—tropical brightness balanced by structured sweetness. The coffee was dried at the Aguileras’ own mill, where thoughtful sorting and patient, controlled drying preserve fruit clarity and build a rounded, syrupy sweetness.

The Aguilera family—multiple Cup of Excellence winners—manage small farms around Naranjo and operate their own micromill. Their disciplined approach to harvesting and quality, coupled with meaningful community involvement, comes through in the cup: a coffee that’s both distinctive and impeccably clean.

Roasting approach

We’ve roasted this lot lightly for filter to emphasise its crystalline acidity and confectionary sweetness. Expect clarity and structure whether brewed as pour-over or batch, with enough depth to shine across a range of recipes.
