The story
Mikava is a small six-hectare farm in Santuario, at the foot of Parque Nacional Natural Tatamá. In 2019, it won the Cup of Excellence Colombia (North) with 92.71 points, the highest score ever recorded at a Colombian CoE at the time. This lot ferments for six days using carbonic maceration in pressurized tanks, then dries in the sun and on raised beds in Marsella, always below 40 °C, until it reaches 10.5% moisture.
Competition-level freshness
All Over Your Limits coffees are stored green, vacuum-sealed, and in the freezer, the same technique used for competition coffees, and we roast them only when you place your order. The cold stops the green beans from aging and protects their sugars, acidity, and aromas, so each lot reaches your cup with the same profile it had the day we first tasted it, even months after harvest.
Why Over Your Limits
Because this coffee was born for competition, and you can taste it in the cup.
