How we would prepare Apas Decaf

Why does Apas Decaf taste the way it does?

The APAS blend is a mix of coffees from the cooperative’s 71 members, who market their coffee under the APAS name. They are among the pioneers of Fairtrade in Brazil and farm in the region around São Gonçalo do Sapucaí. They also regularly achieve success as individual producers in prestigious competitions such as the Cup of Excellence. The coffee cherries for the APAS blend are selectively picked by the members on their own farms, dried inside the cherry, and then mechanically pulped. This dry processing highlights the coffee’s nutty and chocolatey character.

Tell me more about Apas Decaf

For years, APAS has been our bestseller because it appeals to many different tastes. We now import several containers a year. The coffee and our collaboration with the cooperative are strategically important to us. In winter 2024, we asked ourselves: What if APAS were also available decaffeinated? We contacted decaffeinator CR3 in Bremen and reserved a slot for spring 2025. The APAS blend was shipped to Bremen, decaffeinated there, and we then took around three tons of coffee together with roaster friends.

The decaffeination process

This coffee was decaffeinated by CR3 in Bremen using subcritical CO₂, also known as naturally occurring spring water carbon dioxide. All processes have in common that, at the start of treatment, the green coffee is placed in a sealed vessel with water or steamed, so that the pores of the green coffee open up. A solvent is then added to extract the caffeine. In this case, it is the naturally occurring spring water carbon dioxide. In the subcritical CO₂ method, the CO₂ is converted to a liquid state under high pressure and low temperatures, allowing it to absorb caffeine in combination with water. This process takes several days.

How do we roast this coffee?

Very similarly to Apas, since the CO₂ method makes the coffee only slightly more porous. Unlike Sueño, which is decaffeinated with water, this method has a greater effect on the cellular structure of the coffee bean.
