Why does Apas taste the way it does?
The APAS blend is made from coffees produced by various organically certified members of the APAS Cooperative. 71 members have joined together to market their coffee under the APAS brand. They were Fairtrade pioneers in Brazil—and today they are among the very few cooperatives in Brazil producing organic coffee. They run their farms in the region of São Gonçalo do Sapucaí. They also regularly succeed as individual producers in coffee competitions such as the Cup of Excellence. The coffee cherries for the organic APAS blend are dried whole by the members on their own farms and then mechanically depulped. This dry processing emphasizes the coffee's nutty and chocolatey character.
Tell me more about Apas Espresso
It all started in 2017. In our barista training sessions, we needed a coffee that would meet home baristas where they were. It had to be a solid coffee with a familiar flavor profile, easy to dial in, forgiving, and still clearly different from a mass-produced product. We got in touch with Apas through algrano. After importing the first pallet in 2017, interest in this coffee—and the volume—grew. After Apas also appeared repeatedly on our YouTube channel, it quickly became our bestseller. After a long period of preparation, we were able to switch to organic with Apas in 2022. This step boosted demand and strengthened the partnership. Today we import several containers of Apas each year and work more closely together than ever before.
How do we roast Apas coffee?
We roast Apas as a full batch (30 kg) in our Giessen roaster. The roast time is just under 15 minutes, with a development time of 1:30 minutes after first crack. At 200°, the end temperature is quite high by our roasting standards, which makes Apas one of our darker roasts.
