Why does the coffee taste the way it does?

Our Dreispitz Espresso Blend is a great fit for anyone who enjoys a classic, balanced espresso but wants to look beyond the traditional Italian approach. A classic espresso, interpreted in a modern way. Whether it comes from an espresso machine or a superautomatic, Dreispitz just works. Short, bold, uncomplicated—Dreispitz. We started roasting in 2016 in the Dreispitz district on the outskirts of Basel. Our espresso blend is dedicated to this lively, creative neighborhood.

Why did we source this coffee?

Dreispitz is a blend of—who would have guessed?—three equal parts: one-third each from Brazil, Nicaragua, and India. The Mondo Novo Arabica variety from Brazil provides the foundation for this espresso. The coffee tastes of hazelnut and milk chocolate and creates a creamy texture. Coffee from Nicaragua, from the Las Nubes and El Recuerdo farms—neighboring farms and our neighbors and partners in Nicaragua—adds complexity to the blend. Its sweet-and-sour notes balance the blend. The washed Robusta from Bharath Belliappa in India provides the classic espresso effect. The Robusta gives the blend body and a bold finish.

How do we roast this coffee?

As a 20-kg batch on our 30-kg roaster. We usually roast our slightly darker coffees at full capacity, 30 kg, but this coffee is very hard—Canephoras have hard cell walls and need a lot of heat for a faster roast. So we roast the coffee up to just before first crack at 70% energy, which is a lot. We roast it for a total of 13:30 minutes to the same end temperature as our APAS. The roast level is therefore similar, but the color is lighter because Canephoras do not get as dark as Arabicas at the same temperature.
