Description

24/SIEBEN – A decaffeinated coffee from Colombia for pure enjoyment.

In this decaffeinated espresso, juicy cherry notes meet the chocolatey sweetness of brownies. A decaf so aromatic, you’ll hardly believe it’s caffeine-free.

Our 24/SIEBEN comes from La Cristalina farm in Quimbaya, in Colombia’s Quindío department. The family business has more than 100 years of coffee-growing history and is now run by Alberto and German Grajales, together with the next generation, including María Grajales, who has brought fresh ideas to processing since 2015. Alongside coffee, the farm also grows plantains and oranges, and in recent years, several cacao varieties—a step toward making its income base more sustainable and resilient to climate change.

The Castillo Arabica variety grows at an elevation of about 1,450 meters and is carefully hand-selected. Ripe cherries are sorted at harvest, then checked several times during processing and after milling to keep only the best beans.

After harvesting, the cherries are depulped and fermented for 18 to 24 hours, allowing microorganisms to break down the mucilage and give the coffee added depth. It is then gently dried in drying tunnels and turned regularly until it reaches the ideal moisture content.

What makes this decaf special is its decaffeination using natural sugarcane ethyl acetate (E.A.), a process developed in Colombia. First, the beans are soaked in hot water to dissolve the caffeine and soluble aromatic compounds. The water is then treated with ethyl acetate from fermented sugarcane, which selectively binds to the caffeine. After the solvent—and therefore the caffeine—is removed through evaporation, the beans are returned to their original aromatic liquid, allowing them to reabsorb the dissolved coffee oils and flavor compounds. This process produces a gently decaffeinated coffee that loses up to 97% of its caffeine while retaining nearly all of its original aromas. The result is a natural-tasting decaf, free of chemical residues, with a full body and clear sweetness.

After processing, the coffee rests for another month in GrainPro and sisal bags in the farm’s climate-controlled warehouse before being prepared for export.

The result: a wonderfully balanced decaffeinated coffee with notes of cherry and brownie—sweet, fruity, and deeply chocolatey. A decaf promising enjoyment day and night—24/SIEBEN, around the clock.
