Description

24/SIEBEN – A decaffeinated coffee from Colombia for pure enjoyment.

This decaffeinated filter roast pairs delicious cocoa notes with a refreshing sweetness. Like biting into a juicy brownie filled with cherries. It’s a Decaf so aromatic, you’ll hardly believe it’s caffeine-free.

Our 24/SIEBEN comes from La Cristalina farm in Quimbaya, in the Colombian department of Quindío. The family-run farm has been growing coffee for more than 100 years and is now managed by Alberto and German Grajales, together with the next generation, including María Grajales, who has brought fresh ideas to the processing since 2015. In addition to coffee, the farm grows plantains, oranges, and, in recent years, several varieties of cacao—a step toward making its income base more sustainable and resilient to climate change.

The Castillo Arabica variety grows at an elevation of about 1,450 meters and is carefully hand-selected. Ripe cherries are sorted during harvest, then checked several times during processing and after milling to ensure only the best beans are kept.

After harvest, the cherries are depulped and fermented for 18 to 24 hours, allowing microorganisms to break down the mucilage and give the coffee added depth. It is then gently dried in drying tunnels and turned regularly until it reaches the ideal moisture content.

What makes this Decaf special is its decaffeination using natural sugarcane ethyl acetate (E.A.), a method developed in Colombia. First, the beans are soaked in hot water to dissolve the caffeine and soluble aromatic compounds. The water is then treated with ethyl acetate from fermented sugarcane, which selectively binds to the caffeine. After the solvent—and therefore the caffeine—is removed through evaporation, the beans are returned to their original aromatic liquid, allowing them to reabsorb the dissolved coffee oils and flavor compounds. This gentle decaffeination process removes up to 97% of the caffeine while preserving nearly all the coffee’s original aromas. The result is a natural-feeling, chemical-free Decaf with full body and a clear sweetness.

After processing, the coffee rests for another month in GrainPro and sisal bags in the farm’s climate-controlled warehouse before being prepared for export.

The result: a wonderfully balanced, decaffeinated coffee with notes of cherry and brownie—sweet, fruity, and deeply chocolatey. A Decaf for enjoyment day and night—24/SIEBEN.
