About the Coffee & Producer

Some coffees find their way to us in ways that feel especially meaningful. Xenia Calix is our first coffee from Nicaragua, introduced to us by our importing partner, Ali Johnson, who tasted it and immediately thought Little Waves would be its perfect home. We cupped it blind, fell in love with what was in the cup, and were delighted to discover that it was produced by a woman. Sometimes what we put out into the world finds its way back to us in unexpected and beautiful ways.

Xenia Calix manages Finca Santa Teresa alongside her son, Jorge Lagos. After her husband, Isaias Lagos, passed away in 2013, Xenia took on the management of the farm, continuing the work he had begun when he purchased the property in the early 1950s.

This coffee is a Red Pacamara, a variety developed by the Salvadoran Institute for Coffee Research (ISIC) in the 1950s. Recognized for its exceptionally large beans and potential for remarkable cup quality, Pacamara was initially planted at Finca Santa Teresa as a trial because of concerns about its susceptibility to leaf rust (roya) and relatively low yields. Its consistently excellent quality eventually won out, and today approximately 60% of the farm is planted with Pacamara and related varieties, Maracaturra and Maragogype.

Finca Santa Teresa is located in Dipilto, Nueva Segovia, one of Nicaragua's highest-altitude coffee-growing regions. Its cool, humid conditions throughout the year create an ideal environment for growing Red Pacamara.

In the cup, this coffee brings together bright cherry limeade with the sweetness of grilled pineapple and cinnamon and a papaya aftertaste. It's a beautiful introduction to Nicaragua for us, and a coffee we're especially excited to share.
