Supernova is our newest concept created to sit alongside our Nova blend. A medium-dark roast profile perfect for espresso brewing or if you enjoy a more well developed filter roast. Roasted to tame acidity while enhancing body and sweetness. We feature a range of different coffees throughout the year.

High in the Apaneca-Ilamatepec mountains of western El Salvador, near the town of Concepción de Ataco, El Molino is the largest of the farms owned by the Salaverria family. Its 215 hectares climb from around 1,350 to 1,700 metres above sea level, rising from the El Padre lot at the lowest point to Buena Vista at the top. Much of the land faces away from the Pacific, and the terrain changes constantly across the farm: some slopes need windbreaks, while others sit under heavy shade. Bourbon makes up most of the planting, alongside Hybrido de San Francisco (HSF), a variety the family developed from Pacas on their nearby San Francisco farm. Pacas itself, a compact natural mutation of Bourbon, also grows here, together with Caturra and Catuai. Farm manager Tomas Mendoza has been with the family's company, Jasal, for more than a decade. El Molino was once the family's processing hub, but since 2002 every cherry has been processed at their Las Cruces mill, with El Molino's old patios still used for drying during the busiest weeks of the December-to-March harvest.
