Description

October 2026: Mexico El Jaguar

Country: Mexico
Method: Washed
Altitude: 1250 – 1350m
Tasting Notes: Vanilla, Caramel, Stone Fruit, Grapefruit

This month we’re in southern Mexico, with a coffee from small producers in Siltepec, Chiapas.

Siltepec sits high in the Sierra Madre de Chiapas, right on the edge of the El Triunfo Biosphere Reserve. It’s cloud forest country, with plenty of shade, cool nights and rich soil. The coffee grows between 1,250 and 1,350 metres, with a mix of Catuai, Bourbon and Caturra varieties harvested between December and March.

Everything is picked and processed by hand. Once the ripe cherries have been selected, they’re de-pulped, fermented and washed before being laid out to dry in the sun. It’s a traditional washed process that helps bring out the cleaner, brighter flavours in the cup.

The story we like here is what the producers have been through. Back in 2014, coffee leaf rust was causing serious problems for farms across Mexico. A programme called Por Más Café was set up to help growers recover, providing support with replanting and improving their farms. That programme has since become part of NKG BLOOM, which offers producers access to seedlings, finance and training. More than 4,500 growers have benefited from the original initiative, with over 5,300 hectares of coffee renovated.

And the coffee itself is well worth the journey. Stone fruit and grapefruit bring a lovely brightness, with vanilla and caramel adding sweetness underneath. It’s lively without being sharp, thanks to a creamy body that keeps everything nicely balanced. We’ve roasted it to let those fruitier notes come through without losing the softer caramel sweetness. It makes a cracking espresso, particularly if you enjoy a little fruit in your coffee, and works beautifully as a longer black too.
