Description

Cajamarca Coffee, Peru.

From the mountains of Cajamarca, produced by the small-scale growers' association Caficultores de Cajamarca. In this high-altitude region, close to cloud forest areas, coffee grows in cool climatic conditions and fertile soils that encourage slow ripening and a balanced profile.

The blend brings together traditional varieties: Bourbon, Catuai and Caturra, grown on small family plots. The harvest is done by hand and selectively, prioritizing only ripe cherries to ensure consistency and quality in every lot.

The process is washed, a method that highlights the cleanliness and clarity of the origin. After depulping, the coffee undergoes controlled fermentation and careful drying that preserves the bean's natural sweetness and maintains a clear, defined cup.

Its sensory profile is approachable and balanced. Notes of peach stand out, bringing sweetness and softness, accompanied by a plum note that adds roundness on the palate. A touch of lemon brings freshness and delicate acidity that balances the whole without overpowering it.

It has medium body, moderate acidity, and a clean, pleasant finish. It's ideal for those looking for a classic, sweet, versatile cup that works well both as espresso and with filter methods.
