Description
Our organic Espresso PAULI is a blend of organically certified Arabica and Canephora. The Arabica varieties come from Brazil and Peru. The Canephora is a classic Robusta from India, processed using the washed method. We roast the coffee a little darker and in a classic style, making it perfect for anyone who likes to think back to their last vacation in Italy!
Brewing tip – espresso machine:
Coffee: 18 g
Weight in the cup: 45 g
Temperature: 95°C
Brew time: 25 sec
The first coffee in this blend comes from the province of Oxapampa in Peru. The CEPRO Yanesha cooperative is a project that helps connect members of the small indigenous community, and consists of 150 small, family-run farms. The Caturra, Catuai, Bourbon, Geisha, and Typica varieties are grown here at 1,450–1,800 m.
The second coffee comes from brothers Walter and Ednilson Dutra in Minas Gerais, Brazil. Their farm has a 70-year family tradition and is now among Brazil's best coffee producers, thanks to the brothers' continuing education and participation in competitions, which have helped them develop deeper expertise. The Red Catuai, Mundo Nuovo, and Catucai varieties are grown at 600–1,200 m. This organically certified blend stands out for its full body and chocolate notes.
Certifications: Organic, Rainforest Alliance
Farm:
The story of Fazendas Dutra began in the 1950s, when José Dutra Sobrinho (also known as Zeca Dutra) inherited a small farm. For 40 years, he devoted himself to coffee farming, producing Pulped Natural coffee until 1980 while continuing to look to the future.
In 1999, after the death of Zeca Dutra, the family farms were passed on to brothers Ednilson and Walter. They inherited more than 300 hectares of coffee and took responsibility for the future of the family business.
Since then, Walter and Ednilson have worked to increase their production, knowledge, and sustainability. The 300 hectares they inherited have grown to 700 hectares of coffee spread across a total of 1,000 hectares of land, producing 245,000 bags of coffee annually. Through courses and competitions, they have gained experience over the years and improved the quality of their harvests. The farms now hold several sustainability certifications, including Organic and Rainforest Alliance certification.
This lot of naturally processed coffee is a blend of Red Catuai, Mundo Novo, and Catucai, grown at elevations between 600 and 1,200 meters above sea level.
Region description:
The Matas de Minas coffee region is in the southeastern part of the state of Minas Gerais, just beyond the border with Espirito Santo. Alto Caparaó is the best-known of the region's 63 municipalities. With its distinctive topography of rugged mountain terrain, the mild climate of the Brazilian Atlantic Forest, and wide variations in elevation (between 600 and 1,450 meters above sea level), Matas de Minas is a perfect region for growing specialty coffee. The region's unique conditions mean that special care is given to cultivating all crops. Coffee is harvested by hand to select only the ripest cherries; trees are planted farther apart to receive more sunlight; only treated water is used to wash and dissolve the beans; and drying is carried out meticulously and carefully. The region's family farms value sustainability and the natural integration of people and land. Together, these factors favor the production of high-quality coffees with a full body and wonderful nuances in aroma and flavor.
