This juicy coffee comes from the Yirgacheffe region of Ethiopia and is processed and dried at the Chelchele Washing Station. Coffees from the Yirgacheffe region are known for their floral aromas with notes of citrus. Natural processing gives Chelchele a special touch: an expressive berry flavor reminiscent of ripe currants. What is a Washing Station? Many families in Ethiopia depend on growing coffee, but not every family has the machinery and capacity to process the coffee further. That’s why there are Washing Stations in every larger town in Ethiopia, where small-scale farmers bring their coffee cherries. They are also paid directly there, and the station takes care of the processing. In the case of our coffee, the cherries are hand-sorted, then dried on raised beds over several days, and finally hulled and packed into jute sacks.

Our Ethiopian coffee tastes perfectly sweet, fruity, and wonderfully light when brewed with a pour-over. Use 16g of medium-coarse ground coffee and 250g of water (94°C), with a brew time of 2:45 to 3:00 minutes. Enjoy!
